Christmas will be here in just 79 days!! I usually start my holiday shopping in October and space it out over 2-3 months. Super Easy & Delicious Pumpkin Chocolate Chip Muffins #Recipes

These pumpkin chocolate chip muffins are SO soft and yummy and the best part is they are SO easy to make!! Here are the ingredients you will need:

1 1/2 Cups granulated sugar
1/2 Cup brown sugar
1 Cup vegetable oil
2 Eggs
4 Cups Flour
2 Cups Pumpkin (canned)
2 Cups Chocolate Chips (I prefer mini morsels)
1 1/2 Tablespoons Vanilla Extract
1 teaspoon Pumpkin Pie Spice
2 teaspoons baking soda
2 teaspoons cinnamon
4 teaspoons baking powder

Instructions: Mix sugars, oil, eggs, pumpkin, vanilla & pumpkin pie spice with a mixer. Mix remaining ingredients in separate bowl (except chocolate chips, save these for last). Add flour mix to the pumpkin mix. Mix until your batter is a creamy thick orange color. (See photo below). Fold in chocolate chips and gently mix with a spatula. Line muffin pan with cupcake wrappers. Bake at 350* for 10-11 minutes. Let cool for 10-15 minutes.

Bake 350* for 10-11 minutes
This recipe will make 36 muffins

Gently fold chocolate chips into the batter using a spatula

Fill wrappers 3/4 full and bake

I like to bake 2 dozen muffins and then use the remaining batter to bake cookies! The cookies bake at the same temperature for the same amount of time.

Results! The softest pumpkin chocolate chip muffins ever!

How To Help #HurricaneDorian Survivors in the Bahamas

I've been to the Bahamas many many times and I am so sad to see the images coming out of the Abaco's islands and Freeport, Bahamas. I spent many spring breaks in college in the Bahamas and it is such a beautiful, happy place. The Bahamians have always been such kind, loving people. I've put together a list of ways you can help the victims of Hurricane Dorian:

I am a big fan of Bethenny Frankel and I love how she charters planes and helps hurricane victims!

Our Favorite Beaches In #Hawaii + Where To Find Sea Turtles

This week I am going to share with you our favorite beaches that we visited in Oahu, Hawaii. If you've been following along then you probably read all about the great places that we ate in Hawaii and all about where we stayed in Hawaii.

We ventured to many beaches in Hawaii during our vacation. We rented a car for the last half of the trip and we visited the North Shore, Aulani, Ko'Olina Lagoons, Kailua and Lanikai Beach. Out of all of the beaches we visited our absolute favorite beach was Kailua Beach. If you are trying to find it just put in this address: 526 Kawailoa Road Kailua, Oahu HI 96734

Kailua Beach is about 30 minutes from Waikiki and the parking was difficult. This beach is so gorgeous and many locals go here. The parking lot was full by the time we arrived but we circled around and eventually someone left. I would recommend arriving very early. You can read all about this gorgeous beach on Trip Advisor. The sand at Kailua Beach is so incredibly soft. This beach was just gorgeous. This is the type of beach that people dream about. Beautiful clear blue water, calm ocean and no rocks or shells.

Kailua Beach

Our second favorite beach was Lanikea Beach also known as "Turtle Beach". This is a must see for anyone visiting Oahu. We were on the way to the North Shore and noticed a lot of people were parking on the side of the main road at this little beach called Lanikea Beach. We weren't sure what was so special about this beach but we decided to stop and check it out. I am SO thankful we did!! When we crossed the road we noticed a big crowd of people standing on the beach. As we got closer and closer we realized they were watching the most gorgeous sea turtles! Read all about this beach on Trip Advisor We saw 5 + sea turtles on the beach and swimming in the ocean. This was such a special experience.

Sea Turtles are a protected species and it is a law in Hawaii that you must not touch them, feed them or get within 10 feet of them.

Lanikea Beach

Another great beach for families and especially young children is Ko Olina Lagoons. We visited Lagoon #4 which is located furthest from Aulani. The lagoons closest to Aulani had no parking available when we arrived. The parking lots offer free parking which is so nice. We spent several hours playing in the protected calm waters of this gorgeous lagoon. Then we ventured up the sidewalk for a nice walk to Aulani Resort. The walk only took us about 10 minutes from Lagoon #4.

After playing in the lagoon we walked to Aulani and visited the gift shop. Then we grabbed pizza at the quick service restaurant called Ula Cafe. We were able to sit outside and enjoy a gorgeous view of the ocean. The pizza was very affordable and big enough for our family of 5 to share. I believe the entire dinner cost about $40 for drinks, pizza and Mickey ice cream bars. We also stocked up on some Mickey rice krispie treat's and pastries to take back to our condo in Waikiki. Here are a few photos I snapped while walking around Aulani. We hope to actually stay a few nights at Aulani on our next Hawaiian vacation.

We visited around 5 pm and I think the pools had just closed or something because there were not many people out and about.

Pizza dinner at Aulani's Ulu Cafe

Our #Hawaii Vacation: Part 3 Where We Ate

We spent ten amazing nights in Oahu, Hawaii over spring break. Read more about where we stayed here. Today I am going to share with ya'll some of the restaurants and food trucks we enjoyed. The condo we were staying at was located in Waikiki within walking distance of Ala Moana Center which is a huge outdoor mall with tons of great restaurants, a food court, Target, Barnes & Noble, Macy's, Nordstrom, Bloomingdale's, Neiman Marcus, Saks Fifth Avenue and a Ross.

We walked from our condo at The Ilikai to Ala Moana Center several times for dinner. Our first night we dined at California Pizza Kitchen. This is located on the 4th floor of Ala Moana Center. We asked to be seated beside the window and we had a great view of the ocean y'all! My kids love pizza and we have dined at California Pizza Kitchen many times before. It was nice to hop off of a 9 hour flight and have some comfort food :)

California Pizza Kitchen

Day 2 we spent at the beach and we had lunch from Gilligan's Beach Shack. The food truck is parked pretty much everyday in the same area near the Hilton Lagoon. Here is the website: http://gilliganswaikiki.com/ We enjoyed the food from the food truck. My husband had the taco plate and I had the teriyaki steak bites. I felt like it was a good amount of food for the price. The coleslaw is so delicious and I usually do not like coleslaw. The line does get a bit long but we arrived right when they opened at 11 am. My kids loved the shave ice.

Menu

Terryaki Steak Bites, fries and sweet coleslaw

Day 3 we ventured to Duke's Lane Market & Eatery for breakfast. It was about a 10 minute walk from our condo. This is a great spot to grab a quick breakfast, snack, lunch and even ice cream! https://www.dukeslanehawaii.com/ What is neat about Duke's Lane is that you can shop here and buy your groceries or you can dine here. They sell fine gourmet foods, spirits, craft beers and wine's. They have excellent coffee, POG juice and malasadas!

They are located at 2255 Kuhio Avenue Honolulu, HI They are open daily from 6 am until 11:30 pm There is also a great sit down restaurant located inside Duke's Lane Market & Eatery called Basalt. They serve breakfast, lunch and dinner. They offer a great happy hour daily from 3 - 6 pm and you can score mai tai's for $6

Breakfast of champions! Malasada's and POG juice

Look at all these amazing pastries and breakfast goodies to choose from!

Breakfast sandwiches and doughnuts

                                                                     Delicious gelato

We rented a car for the last 5 days of our vacation. We ventured to the North Shore several days and we absolutely loved the Surf & Salsa food truck! I highly recommend this if you like mexican food. *They are closed on Sundays* Here is the website: https://www.surfnsalsa.com/ and their social media:

They have a nice seating area with tables located behind the food truck.

They have parking available

Complimentary chips and salsa

The most delicious cheese quesadilla ever

The burrito's are so delicious!

My favorite lunch in the North Shore---Surf & Salsa

We made reservations for dinner at https://www.tanakaoftokyo.com/ to celebrate my husband's birthday. We really enjoyed the hibachi style restaurant. The food was excellent and we will definitely return. Tanaka of Tokyo has several locations in Oahu. We dined at the Ala Moana Center location which is the "west" location. Excellent service and super yummy food!

Sadly I did not snap any photos of our meal but here is the chef cooking our dinner! I ordered the chicken teriyaki and my husband had the filet. They were both amazing.

Next up, my all time favorite lunch spot in Waikiki..... Duke's!! This is a must eat spot in Waikiki. Located on the sand at the Outrigger Waikiki Beach Resort. 2335 Kalakaua Avenue Validated self-parking is available at the Ohana East Hotel!
